Hachidori’s menus are carefully curated by using what is currently available on the local market, and dishes chosen now come from well beyond the Japanese and Asian palette. Kaori is just as at home with Mediterranean culinary traditions and ideas as those from her home country. Recipes are sourced from all over the world, and Kaori strongly believes that organic, local and seasonal ingredients are what brings the best out of any food; keeping it delicious, nutritious and with less carbon footprint.
